Cute Everyday Japanese Cookie Box Inspiration

If you asked me what is the one thing I love baking and photographing more than anything else I would not even hesitate for a moment to tell you that I love creating cookie boxes. What started as a Christmas gifting themed blog post became a full-blown butter-forward, sugar-dusted, jam-filled obsession hobby. I no longer need a special occasion to build a cookie box — I would make a cookie box on a normal Saturday, I would make one at 11:53pm, and I would definitely make one if my order of cute cookie cutters arrive on a weekday afternoon. Lately, the types of cookie box that I have been obsessed with are these small and delicate cookie tins that I keep seeing on Japanese blogs and Pinterest boards. What I mean by obsessed is that upon seeing a few of these tins and starting a pin board dedicated to these boxes, I ordered a couple of Japanese baking books that focus on the art of creating cookie tins despite not being able to read any of the text. What I love most about these small Japanese cookie tins compared to the larger festive ones that I have made in the past is that they are so unassuming. They are extremely unassuming on the outside but when you open the small metal tin, there is a great assortment of crisp buttery cookies arranged artfully and compactly. Chinese New Year Cookies

Happy almost Chinese new year! I celebrate all the other holidays of the year by baking elaborate cookie boxes and shaker cookies but I have never really done anything too big or extravagant for Chinese new year. I made these nian gao-stuffed cookies last year (they were so much fun!) but not much else beyond that. I promised myself that this year will be the year I do more for this special holiday because it is one of my favourite Chinese (and in general) holidays of the year. As I mentioned in the previous year, Chinese new year is celebrated with lots and lots of food — from sticky nian gao rice cake, to savoury taro and daikon cakes, and to trays of assorted sweets called Trays of Togetherness. This year I decided to make my own version of this tray of treats, but in a cookie box form (of course). This year, my tray is filled with classic stamped shortbread, shaker cookies, window cookies to represent fai chun, Chinese almond cookies, and chewy sesame cookies. 

I have shared a tutorial on my shaker cookies before but I have updated it with even greater detail this time around to make sure you end up with the shaker cookies of your dreams. Of course these Chinese new year shaker cookies are filled with gold sprinkles and topped with edible gold leaf — you cannot celebrate Chinese new year without any gold. Cookie Advent Calendar

Happy first day of December! Are you surprised that this is not a post about a holiday cookie box? Because I am. Every year when I am in the seventh hour of cookie box making and assembling, I promise myself that I would start my holiday cookie box earlier in December and not wait until the last minute. In the weeks leading up to December, I always contemplate starting my Christmas baking to try and avoid any royal icing-induce meltdowns closer to the holidays. Guess what? Once again I will be making my cookie box mid-December, but this year I have a good reason to delay the cookie box. Besides the fact that it is not as fun to be making Christmas cookies in November, the reason I am pushing my holiday box aside is that I wanted to make this — a 100% edible gingerbread advent calendar I saw over on CBC. A cookie advent calendar is more straightforward than a cookie box because you only need one type of dough for the entire project. I chose sugar cookie because it is one of my favourite cookies despite its simplicity. Shortbread, gingerbread, or any cookie that does not lose its shape when baked would also be great for this. I toyed around with the idea of baking 25 different types of cookies (insane) for this calendar instead of 25 uniquely decorated cookies (still insane but less so). I quickly tossed that idea away because baking 25 different types of cookies means I would end up with over 300 cookies in my house because one cannot really bake just one cookie from any cookie recipe and I was not quite ready for that level of commitment. mid-autumn has always been one of my favourite holidays of the year. it’s a holiday of gratitude and reunion, and i have so much to be grateful for this year. thank you for following along with my mooncake making journey. we went from not-so-great snow skin mooncakes a few years back to making so many varieties of mooncakes this year and recording a podcast episode with @cherrybombe all about mooncake making! i’m so grateful that i get to share my love of this holiday with you. 

these are my last mooncakes of the season (i made them this morning actually!). i filled the boxes with four types of mooncakes: white lotus, red bean, red bean with salted egg yolk, and pineapple. i hope your mid-autumn is full of joy and all the delicious things! 祝福中秋佳節快樂,月圓人圓事事圓滿 ✨

classic white lotus paste mooncakes with double sa classic white lotus paste mooncakes with double salted egg yolks, but with a colourful crust! it was my first time colouring a traditional mooncake dough and i don’t know why i haven’t done it sooner?! the before will always be prettier than the baked version because they will lose a bit of vibrancy during the cooking process, but i still like the subtle pops of colour that stayed. these mooncake molds are slightly larger than my normal ones (it makes 150g mooncakes instead of the classic range of 50 - 100g) but it allows you to really see the details of each scene on the mooncake. happy mid-autumn’s eve and i hope you’re enjoying so much mooncake! 🥮

‘double salted egg yolk’ jelly mooncakes! ✨ ‘double salted egg yolk’ jelly mooncakes! ✨

the best part of a traditional mooncake has to be the double salted egg yolks in the centre, so when i created these peach-flavoured jelly mooncakes i knew they had to have a jelly version of the yolks too. the yolks are made by setting a coconut milk-based gelatin mixture in a round ice cube tray and adding it to a cooled peach jelly base after it has set. remember to only add jelly inserts in cooled gelatin mixture or else it will melt the inserts! this is the same method for the blue skies jelly mooncakes a few posts back. i shared the steps for making jelly mooncakes on the blog for those who are interested!
